Caramel sauce carries more energy than chocolate sauce for a simple reason: it is almost entirely sugar and dairy, where chocolate sauce includes cocoa solids that add flavour without adding much energy. That is why this comes in above the Chocolate Sundae at 2,227 kJ despite tasting less rich.
Against soft serve, caramel works particularly well because the salt in a good caramel cuts the sweetness of the dairy. A sundae with unsalted caramel is one dimensional; with salt it becomes considerably more interesting, which is why salted caramel took over dessert menus.
All three sundaes cost $6.05 and the differences on energy are modest, so the choice is purely taste.
Who it suits: anyone who prefers caramel to chocolate, and anyone who finds chocolate desserts too rich. Caramel is the lighter tasting option even though it is the heavier one.
