  • Processed cheddar beats a good aged cheddar here. Aged cheese splits under heat and goes oily; the processed kind melts flat and stays put.
  • If the cheese has not melted by the time the patty is done, cover the pan with a lid for thirty seconds rather than cooking the meat further.
  • Slice the tomato thicker than feels right. Thin slices disappear under the cheese.

Variations

  • Add two rashers of streaky bacon under the cheese and it becomes something close to a Bacon Deluxe.
