That is why the last third of a very sweet frozen drink can taste syrupy while this one stays bright.

- Citric acid, not more lemon. Lemon adds flavour as well as acid; citric acid adds pure sourness.
- Make it sharper than you want. Cold mutes acid and the finished drink lands softer than the mix tastes.
Variations
